Flourless Chocolate Torte

Ingredients
For the Whipped Cream:
- 1 cup heavy cream
- 3 tablespoons confectioners’ sugar

- 2 tablespoons coffee-flavored liqueur, preferably Kahlua (optional)

- 4 large strawberries, hulled and sliced
Directions
Step 1 - Prepare Whipped Cream:
- In the bowl of a stand mixer equipped with a whisk attachment, combine the cream, 2⅔ tablespoons of the confectioners’ sugar, and 1 teaspoon of the vanilla.
- Beat on medium to start with and increase to high when the cream thickens, beating until soft peaks form.
- Transfer to a bowl and refrigerate until ready to use.
Step 2 - Prepare Chocolate Mixture:
- Add an inch or two of water in the bottom of a double boiler (or in a 2-quart pot).
- Bring to a gentle boil over medium-high heat, and combine the chocolate and butter in the top of the double boiler, or in a stainless steel bowl set over the pot of simmering water.
- As the chocolate and butter melt, mix to blend them.
- When they are completely incorporated, remove the double boiler or pot from the heat, and set aside covered with a dish towel to keep the mixture warm.
Step 3 - Preheat Oven:
- Preheat the oven to 300°F.
Step 4 - Prepare Cake Batter:
- In the bowl of the stand mixer equipped with the whisk attachment, whip the eggs on high speed for 3 minutes.
- Add the granulated sugar and whip for 3 minutes more.
- Add the espresso, coffee liqueur, and the remaining 3 teaspoons vanilla and beat until they are incorporated into the sugar and egg mixture.
- Remove the bowl from the mixer and gradually fold in the chocolate until the mixture is smooth and evenly mixed.
Step 5 - Bake the Torta:
- Pour the mixture into an 8-inch round cake pan or a 5 x 10-inch baking pan.
- Cover with aluminum foil and place the pan in a sheet pan with high sides.
- Fill the sheet pan with about 1 inch of water and place the pans in the oven.
- Bake the torta for 1½ hours, or until the center is just firm.
- Periodically check the water bath to ensure it does not go dry, and add water as necessary.
Step 6 - Cool and Serve:
- When the torta is firm with very little jiggle in the center when the pan is jostled, remove the pan from the water bath and let the torta cool for 15 minutes.
- Cover with plastic wrap and refrigerate until cold and firm, 2 to 3 hours.
- When cool, slice the torta with a knife dipped in hot water and wiped dry on a towel (for ease of cutting).
- Serve each slice with a dollop of whipped cream, a few sliced strawberries, and sprinkle with some of the remaining confectioners’ sugar.
