Celebrate National Pasta Month with the perfect Italian dish at Carmine's

LAS VEGAS (KSNV News3LV) " Not that we need an excuse to eat delicious pasta, but October is National Pasta Month and we have some tips for whipping up the perfect Italian dish, courtesy of Carmine's.

Joining us is Executive Chef Michael Ingino.

Ingino has some great tips for serving up the perfect pasta dish:

Start with cold water -- and a lot of it. You should have one gallon of water for every pound of pasta.
Bring the water to a full rolling boil, then add about a tablespoon of salt per gallon of water.
Add the pasta, but keep it uncovered.
Cook the pasta until it's al dente; the pasta should maintain bite and texture.
Drain the pasta into a colander, but don't rinse it.
Serve immediately -- freshly boiled pasta should never sit.
Don't overpower the pasta with too much sauce; you should still be able to taste the pasta once it's sauced.
Carmine's has a four-pasta special available every Sunday in the month of October, serving six people with a platter of vegetable lasagna, manicotti, bolognese bow tie pasta, and pesto gnocchi.
